Lime Marinaded Shrimp Salad
Battered shallow fried King Prawns with Tomatoes, Cucumber and Serrano Peppers, Sour Cream, Lime and Toasted Tortilla and Guacamole 

Chilli Verde Enchiladas
Boneless Pork Shoulder braised with Enchiladas Sauce, Salsa Verde and Green Chilli, with Sour Cream and Lime, Tomato Relish

Grilled Onion and Skirt Steak Tacos and Salsa Roja
Char Grilled Mexican Skirt Steak with Spring Onions, Coriander and Garlic. Tomato and Coriander Sauce, Yoghurt Dressing 

Chocolate and Caramel Short Crust Tres Leches Cheese Cake
Cinder Toffee and Chocolate Cheesecake with Butterscotch Sauce and Vanilla Ice Cream
